To dub(transfer) VHS cassettes to DVD, you'll several things:
1. A VHS VCR
2. RCA type audio/video cables(yellow for video, red and white for audio).
3. A DVD recorder(the one with no hard drive)
First, connect the audio/video cable to the output jacks on the back of the VCR. Be sure that it is the output, NOT input.
Next, connect the other ends of the cable to the input jacks of the DVD recorder. Some DVD recorders have two input jacks: one at the front, the other at the back. If your DVD recorder comes with the input jacks on the front, use them.
Then connect the DVD recorder to the TV.
Turn on the TV, the VCR and the recorder in this order. Insert the VHS cassette you wish to copy into the VCR and press "Play". If the connections are done correctly, you should see and hear the video. If not, check the connections and make some corrections.
Insert a blank DVD-R(if your recorder is capable of recording DVD+R discs instead) disc into the recorder. The machine will first initialize the disc. Initializing means formatting the disc and setting up for recording.
Press the "Record" button on the recorder or on the remote. Now you are recording the cassette. When you're done recording. press the "record stop" button. (Some models use the stop button).
Then using the DVD recorder's built-in menu, find the command to finalize the DVD-R disc and follow its instructions.
By the way, I forgot to mention earlier that if you're trying to copy a VHS movie, you can't because of the copy-protection signal. If the DVD recorder detects the signal, it will display an error message saying that recording is not possible because of copy protection.
That's how you record VHS cassettes to DVD.

The best way I've found is with a DVR with built in DVD burner. Just record the output of the VHS recorder to the DVRs hard drive. The DVRs internal software should allow you edit, create chapters and name each video. This is a lot easier than using a computer. No computer hardware or software to buy.

The simplest way?
Buy a combination VCR/DVD recorder. Load the VHS, insert a blank DVd-r or DVD+r disc, press record.
Yeah, you can go down the software conversion route but if you just want to make backups this is easier.

get yourseld a combined dvd recorder/vhs machine, or a usb2 video capture device and then record them onto your pc, then burn them to dvd.
unfortunatly, it'll all have to be done in real time and it'll never be better quality than the source video.
