Oh my God! They killed Kenny!
This is the line that everyone waits for. It's the equivalent to an older generation's Wile E. Coyote. The coyote would try all these devices to try and catch the roadrunner, but they would always backfire. People will laugh even with a running gag.
Coincidentally, the first episode that Kenny didn't die in was their first Christmas episode (the one with Mr. Hanky, not the electronic greeting card with Santa and Jesus fighting).

kenny has bad luck and dies so much because it is a known fact that poor people die sooner then people who are not poor.

Kenny dies because he doesn't speak, so noone really misses him anyway. I think of it also of a creativity aspect, how many different ways did they kill kenny. The baked potato heart was one of my favs.
