imagine how lightly and carefully you would have to step if you walked into a room that the floor was covered from wall to wall with raw eggs in their shell and you had to cross from one side of the room to the other.

people say that they have to walk on eggshells around people that are difficult to be around - explosive, extra sensitive, grumpy, ..... because any false move will cause an unwanted response.

If you were actually walking on eggshells, you'd have to walk very carefully, to avoid breaking any. In this same sense, anybody around whom you have to walk like your walking on eggshells (sometimes shortened to "walk on eggshells around) means to be very careful what you say and do, lest you anger them or hurt their feelings ("break" them).

it means that you are scared or nervous
and unable to do or say anything because you will make someone angry for no reason

an example

bill and jane are married
jane always yells at bill when he walks in the house
she calls him names and hits him with a frying pan
she even put him in the hospital this one time when she used a
baseball bat instead of the frying pan
bill is afraid of jane and wants to get away from the psycho
broad but he is afraid she will kill him if he tries to leave her
so he lives in fear and he is always afraid
this would be walking on eggshells
and eggshells crack when you put too much pressure on them

it started in Yorkshire after a windy night on a certain farm all the chicken eggs fell out of the free range nest and the farmer walked all over them and then shot himself in despair ! ( Yorkshire Post November 1862)

It means being careful of what you say or do so as not to "crack the eggs beneath your feet"....but less literally. this usually applies to being cautious how you act around other people for fear of creating problems in a tense situation.
