There's the sensitive plant. Apparently it's actually called Sensitive Plant. You touch it and the leaves immediately close in to each other. Kids love them, but they're easily traumatized by repotting, etc.

I reckon I've seen a plant stand upright from a leaning position when I watered it after a dry spell. It was freaky.
