Mustard isn't only one color.

The really yellow mustard that we're accustomed to in the US is because they add tumeric to it to make it a bright yellow.

The color of the mustard depends on the type of mustard seeds (and other ingredients) used to make it.

There are mustards out there that aren't that bright yellow color or yellow at all.

No.

It should have different colors as well as different flavors.

How about a green apple-tasting mustard?

Or a blue mustard that tastes like cinnamon?

Mustard is yellow, and tastes like mustard.

Why change it?

Proper mustard is two colours. The liquid is yellow while the seeds are black.

Yeah, purple. Just because I like that color, very mystical and I may try some mustard, if they'd make it only in purple hehe

I don't think mustard could be "multi-coloured".
But, if you mean red or green, I wouldn't use it.
That would stray too far from my comfort zone.

People tried making ketchup (or Catsup, whichever you prefer) different colors, and that plan backfired.

Leave the classic the way it is -- Classic.

Yes and ketchup, too. I don't think the different colored ketchups they tried a couple of years ago really ever caught on, did they?
