Congrats. Have an intimate dinner followed by a night of catering to him (massages, bubble baths etc.) Hopefully he will reciprocate the love.

Next year, put a little planning into the day to make it extra special.

Firstly...you waited too long to plan this...how could you wait until the last minute? Lucky for you, the traditional first year anniversary gift is to be made of PAPER. Write a letter to your spouse expressing your love and passion over the events of your first year as husband and wife (Make sure you use specific examples) In addition you should express your excitement for your future together. Make promises of the heart (and keep them)!

I think the most romantic thing to do would be to spend it where you had your honeymoon, if it's close enough. Treat her like a queen no matter where you are. Try a luxurious bath with candles and wine. At least offer a full body massage. Who knows, it could lead to other honeymoon activities.... ;). Congratulations and good luck!
