After the growing season, I have 3 to 4 feet tall Asparagus stalks. Shoul I wait until they turn brown to cut them off? And, how exactly should they be cut (abov or below ground)?

Fall is best, make sure the seeds fall off. in early spring lightly rototill about 1" deep rough chucks don't powder the dirt. you just want to allow the seeds to get in the top layer of soil. before you till add some rock salt on top. hand spread like feeding chickens, it will keep the weed down, and make the asparagus tender. enjoy

I think you should wait for them to turn brown. If you have harvested the shoots earlier in the year then the plant needs the photosynthesis provided by these stalks to prepare for winter. It is the same with bulbs that flower. You don't dig them up until the leaves turn brown so the bulb has nourishment until it can sprout again next year.

Cut the young shoots and have them for dinner! To let them grow is a waste of a delicacy!
