The same reason that most of Europe is in one time zone. The people there want it that way. You have to admit that the use of multiple time zones is confusing. If all of Canada had one time zone, then 12 noon would no longer mean that the sun is directly overhead for most Canadians. The sun would probably rise at 5 AM in Nova Scotia, and 9 AM in Vancouver. But 8 AM would be the time everyone started work.

The population of China is also spread out differently. Most people leave in the Eastern part of the country. The poor folks in the West have their sense of time messed up, but the majority rules, so they have to suffer.

Like the US and some other nations, Canada chose to be divided into multiple time zones.

China wanted there to be one timezone for the entire country, with no need to translate the times in one zone into another, which only serves to confuse people, cause unnecessary problems with schedules for flight departures and arrivals, etc. Though this creates some problems, it makes it easier for everybody. Everyone knows what time it is for everyone in China. The US and Canada should do the same thing.

Time zones are established zones around the world to keep pace with the sun, but whether the country uses them or not is up to each country.

China apparently feels that its more important for everybody across the nation to be on the same time (some go to work in the dark while others come home in the dark) than to balance it out so everybody gets an equal amount of the sun.
