There are many reasons for example:
-1- players preference
-2- weather condition
some players (dark skin usually) playing in low temperatures, rain or snow get cold easily.
-3- body shape ( this 1 may expain more for U)
some players (like:England's Peter Crouch) are really skinny long legs long arms and they feel like diabetic compere to other players who have very solid build up. Wearing long sleeves they can hide that problem and increase the confidence

I have heard some players complaining that when they wear long sleeves they get them pulled on at corners etc...
plus short sleeves are cooler I guess

personal preferance mostly
some is superstition - like every time they wear long/short they win so that's what they wear no matter the weather
