Should not be capitalized,
and it would be better to just spell out year.

First of all, why would it say "5.1 year" anything? That's a really odd way to put "5 years, one month and amost a week" Just say 5 year apprenticeship... If you were referring to something you only did for a few months or weeks, you could say how long in months or weeks, but to add a decimal to a year (as in 4.3 or 6.1) is a very awkward way to write.
