Both hands.
When I was a kid, though, I couldn't do it...and I really wanted to be able to! So, to train myself, I wrapped rubber bands around my fingers to hold them in place. *laughs*
I'm lucky I didn't lose circulation in my fingers. But, as a result, I can give the Vulcan salute with both hands.
As an interesting aside, William Shatner (Captain Kirk) was never able to do the Vulcan salute. Remember the scene in Star Trek III when Kirk does the salute and asks Bones how many fingers he's holding up? Shatner had fishing line tied around his fingers to hold them in place.

i can do it with both hands easy....i grew up watching star trek w/ my mom. i could only do it w/ one hand for years but i kept doing it when i got bored and now it practically comes natural...sad i know
