The most "nobel" would be giving out the Nobel Prizes.
I think being a teacher is a wonderful thing. I'm related to about 40 teachers, actually, and I teach as well.

Fields include physics, chemistry, physiology or medicine, literature, peace and economics.
Once some professions were not considered by Nobel to be worth an award, other prizes were created, e.g. Crafoord Prize in mathematics.

Doctors... especially surgeons. I can't imagine cutting someone open without getting queasy but they do it every day and tinker with the innards... you would need the self confidence of a fighter pilot to do that.
