If this helps, the file is a form, and I'm only trying to add text to fields in which you should be able to. I am using Adobe proffesional.

If you have Acrobat Professional: You have to have the fonts installed on your system. Go to Tools > Advanced Editing > TouchUp Text Tool. You can then select the text you want to edit or click an insertion point and enter text

Keep in mind that this is intended to make only MINOR edits. Newly entered text will not reflow, so it may not fit in the layout the way you want it to.

If you have to make extensive edits, go back to the creating application or save the file as a Word doc and edit there.

First off you'd need Adobe Acrobat (not Reader, the full version) and even then the ability to add text is very limited.

The ability to add text to a pdf file defeats the purpose of why the pdf was created in the first place: in order to share a document without someone changing anything on it.

If you need text from a pdf document though, and it was made in such a way where you can highlight text, it should be a simple matter to copy and paste it into a word processor.

I think you can only edit the file if you wrote it yourself, even if you have the right (very expensive) Adobe software to do it with.
