It was announced at Elvis shows to tell the crowd Elvis was gone.
Wikipedia says:
"Elvis has left the building!" is a phrase that was often used by public address announcers following Elvis Presley concerts to disperse audiences who lingered in hopes of an Elvis encore. Al Dvorin, a concert announcer who traveled with Elvis throughout the performer's career, made the phrase famous when his voice was captured on many recordings of Elvis' performances.

The reason for the phrase, "ELVIS HAS LEFT THE BUILDING" is because he was such a huge star that MASSES of women would try and see him after a big concert and would congregate at all the Exits just to catch a glimpse at the King. It was so out of control, that the mobs would congest traffic. So, after a concert, there would be an announcement immediately following his exit from the stage, and that was, ofcourse, "Elvis has left the building!" I know this FIRSTHAND, because I went to see the King in 1976 and I just LOVE ELVIS!! I was only 6 years old at the time, but boy was it awesome!!!!

Er, they used to say it in theaters after Elvis had left the building so that the screaming fans would leave the theater and go home too!
I hope that hasn't been bothering you since 1958!

It was actually said to help disperse concert attendees at the end of many of Elvis's comcerts. It was common for people to stay as long as possible for another glimpse of the King.

After Elvis had given his final encore and left the stage, the crowd headed for the exits, even though many other Hayride acts were still waiting to perform. Logan took the microphone and pleaded with Elvis's fans to return to their seats: "Please, young people . . . Elvis has left the building. He has gotten in his car and driven away. . . . Please take your seats."

Not surprisingly, from his concerts. They would announce that from the stage so people wouldn't keep expecting him to come back for encores, and would go home.
