eat less high-fat food (esp high in saturated fat)
replace part of the saturated fat in the diet with unsaturated fat

“the fat in fish actually lowers cholesterol, helps prevent blood clots that form in heart attacks" Look up this: http://www.mercola.com/products/krill_oil.htm

If neither are available, take flax seed oil once in morning, and once in mid-afternoon. Also very good for cholesterol.

ALSO

too much bad rap has gone for coconut oil. It is safe, has a myrrad of benefits and is the ONLY oil that should be used for cooking.

Olive is too fragile and becomes carcinogenic when heated and causes free radical damage which your Mom wants to avoid.

Make sure she stays away from margarine, and anything containing Partially Hydrogenated Oils. These will kick up cholesterol and cause aterial damage.

Ask your mom not to worry about cholesterol. Cholesterol need not be reduced. Just visit:
http://www.theomnivore.com/The_Great_Cholesterol_Con.html

There is much more info available on
http://groups.yahoo.com/group/ayurvedaonline/messages
and then type word cholesterol in search window and 'go' button to be clicked.

Even then, if you are not convinced that cholesterol need not be worried about, i suggest following simple remedy for 3 months.

At bed time, take 1 tsp of fenugreek seeds, soak them in 1 cup of water (4Oz), In the morning, drink water and seeds can be thrown or chewed for more benifit.

If soaking regularly is getting forgotten, get Trifla Guggul from online ayurvedic pharmacy and take 2-4 tabs after lunch and dinner. The tabs need to be slight chewed and swallowed with water. Check cholesterol only after 3 months of treatment.

By the way, if you just increase leafy vegetables in diet, that alone should do wonders. Check Iron rules of health articles at ayurvedaonline. They tell you some simple facts about fats, proteins. "Cholesterol" is sales mantra of drug industry!

1)Follow a low fat.... Low-cholesterol diet
2) Lose weight if she is over weight.

While diet alone may not lower your cholesterol level enough, adopting dietary changes is usually the first step in a cholesterol-lowering plan

1. Avoid high-fat foods

Fatty red meats

Butter

Lard

Tropical oils (coconut, palm, palm kernel)

Bacon

Whole milk and whole milk dairy products (cheese, yogurt, sour cream, ice cream)

~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Use vegetable oil or olive oil instead of butter or lard
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Enjoy low-fat foods

Fruits

Vegetables

Fish, chicken (skinless), and lean meats

Whole-grain cereals, pastas, and rice

Fat-free or 1% milk

Fat-free or low-fat yogurt
~~~~~~~~~~~~~~~~~~~~~~~~~~~
Make changes slowly. Getting used to your new diet gradually can help make it easier for these changes to become part of your life
Talk to your doctor or nutritionist if you have questions or need advice
Try new foods or brands to find those that you and your family will enjoy
Check a few low-fat and low-cholesterol cookbooks out of the library.
Good Luck.
