Banana Nut Bread with Buttermilk

Serving Size: 12

Ingredients:
Amount Measure Ingredient -- Preparation Method


Cooking Directions:

3/4 cup butter or margarine
1 1/2 cups granulated white sugar
1 1/2 cups mashed bananas (3 medium bananas)
2 eggs -- well beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup buttermilk
OR
1/2 cup milk -- soured
AND
1 teaspoon vinegar
3/4 cup chopped walnuts

Preheat oven to 325?F. Cream butter and sugar together thoroughly.

Blend in bananas, eggs and vanilla. Sift flour, baking soda and salt
together. Add to banana mixture, alternating with buttermilk and mixing
thoroughly after each addition. Add nuts and gently mix. Pour batter into
greased and floured loaf pan. Bake for 1 1/4 hours, or until done.

try www.recipe.com or .co.uk if there is such a site. failing that i'd try looking in your local library for the recipe. try just doing a simple web search. there is a link to a mariesimone on the list for apple butter bread, i guess the recipe would be almost identicval just leave out the apple. but I can't say for certain
the links are from the same search page in yahoo.

cdgchris has a great recipe I'm gonna try. I've only been cooking for 41 years, so I'm sure there are lots of people more knowledgeable than me. I use the basic stuff, but in the heat of SO Cal you have to watch the temp of baking, and cooling. Timing is the secret for flufflyness, but the heat factor is really important also. Good luck. Ron

Butter Bread???? are you sure???? I mean, if Tescos dont sell it is it feasable to make it???? wouldnt the butter melting as it cooked make a HELL of a mess in your cooker?
