The range from 40 to 140 is the range to AVOID! Keep food colder than 40 degrees or hotter than 140 to prevent bacterial growth.

The National Serve Safe standards say cold foods below 40 degrees and hot foods above 140. Anywhere in between is not good.

cold food needs to stay around 40 degrees; hot foods around 150 or so---the 40-140 they call the danger zone when the bacteria can really grow wild.

hey... i work in the kitchen at a waterpark.. Hawaiian Falls... and the danger zone is between 40 and 140 degrees farenhiet.. so below or above those and you are good...

40F-140f anything inbetween this for an extended period of time can be questionable
