Update your resume and send it with a letter describing your desire to be an engineer to as many local companies as you can find. Also, track down relatives and friends that work at a factory and give them your information to pass on to a boss. Don't be a snob about the work you may be offered. You are only a sophomore, so you will be limited. Any experience (even just working on a line) at a factory is valuable.

If you have an idea what type of specialty you want to major in as an M.E. try to find a company that specializes in it. You can get an idea of what it will be like doing that type of work and you can change to something different if it doesn't appeal to you. I ended up working in Facilities Engineering and I didn't have to specialize in what the company did, my job entailed everything that the infrastructure of the company required. I could have gone to any company and worked as a facilities engineer. I was involved with anything you can imagine. Designing air conditioning systems, designing controls, steam, air and water distribution, and much more.

I recommend you consult with your college or university regarding internships within your field of study.
