IMO if the cheese, etc. is put on raw dough, that causes the crust to take long to cook. I did that method before and it worked but restaurants won't do that for me. Boo!

For Amount ? -- Cheese !! For Quality? - Some places have Terrible tomato sauce (I am NOT making a joke about the recent Tomato problems) I think an Excellent Tomato sauce is the Most Important item in making a Great Pizza. .

Pre cooking the pizza crust wouldn't make it crispier, just stale. Resturants have to pre-make alot of things before they are served and some don't sell as fast as others. Not cooking the crust first is the surist way to make sure its fresh.

Restaurants have a specific way that they make their product. If they changed it of every person who thought that they could improve their product then it wouldn't be theirs anymore. If you do not like over cooked crusts, it sounds like you should stick to chain places like Pizza Hut that don't use brick ovens. A quick FYI for you, having worked in many kitchens, if you are a real pain in the *** while you are ordering and ask for too many changes people in the kitchen do bad things to your food. I would just eat the food on the menu as it is presented OR EAT AT HOME!

I always partially cook/toast the pizza base first before adding the topping and putting it back in the oven. It makes the pizza better as the base isn't soggy and sometimes it requires a little more time to get done than the topping.

if you want a crisper crust rolling the crust thinner should do the trick.
