Do you HAVE to blanch zucchini before you freeze it? or can I just wash, slice, package and freeze?

I freeze raw zucchini just like I do yellow squash. Be sure that you take the air out and use a good freezer bag. It can be steamed or microwaved with butter, salt and pepper.

I have frozen raw zucchini after just washing and slicing it. HOWEVER, when you thaw it out, it is quite mushy. I like it for zucchini bread and in other recipes where it did not have to be firm. It tasted just fine to me! GL

I just wash slice package and freeze. Been doing it for years.

It won't taste good. You might as well learn from the experience of those who've gone before you. There's a good reason they tell you to blanch it!

not a good idea to freeze zucchini as it is mostly water wont hold up well at all cooked or blanced yuck not good idea..

You're supposed to blanch it but I bettcha it would work if u didn't.
