Look in the frozen food section of your supermarket and see if they are there. If not, there should be packages of fresh noodles. If you cannot find these, then I'm sure you could cook dried noodles. A 12 oz. package of dried noodles would make a lot more than what you probably need for that recipe. Add what you think you need and you can freeze the rest for later use. (Or just have a quick lunch with the rest with some pasta sauce on top.)

frozen noodles in the frezer section? I've never seen however there are some in the refrigerated section in most grocery stores. could also be frozen raviolli.

here recipe for egg noodles:

HOMEMADE EGG NOODLES

EGG NOODLES:
3 cups flour
1/2 tsp salt
4 eggs, at room temperature
1/3 cup water

Put flour, salt and eggs in a large bowl. Using your hand, mix together, adding 1 tbsp water at a time and mixing until dough forms a ball.

Place dough on a well-floured board and knead until smooth and elastic, about 8-10 minutes. Cover and let sit for 15 minutes.

Cut dough into 4 equal parts; keep covered. Roll 1 part of dough at a time until desired thickness is reached (about 1/16th of an inch). Roll dough around rolling pin and slip rolling pin out. Cut in 1/2 to 1/8-inch strips and shake out on a towel to dry, for about 2 hours. While noodles are drying, make soup.

Expensive lasagna. Prosciutto is a dry cured ham and as such requires no cooking. The Smithfield Ham of America is also a dry cured ham. Dry curing in effect removes all the moisture from the ham by using salt that creates a desiccating environment. The removal of moisture also creates an environment that is extremely unfriendly to microbial action because it denies them moisture and changes the pH. Prosciutto is no smoked I read the recipe and personally I would cut the prosciutto chiffonde rather than chopped. To make a chiffonade cut roll the prosciutto into a tight cylinder and cut thin strips across the cylinder. To save time you can stack the slices. If you eliminate the prosciutto - because it will clog a pastry bag tip and change the lasagna noodle to a large manicotti tube you can save a lot of work and some money to boot Place a large plain tip in a large pastry bag. fill w/ spinach ricotta mxiture pipe into manicotti tubes, folling from one end then the other have fun

I know you can get fresh noodles from the grocery store. Japanese markets have soft fresh noodles. Maybe they freeze them, and this is what the recipe calls for. Who knows? Wish I could be of further help.

If you don't have any frozen noodles you could freeze them yourself or just use fresh ones. They will weigh the same.
