The men who lead in prayer are called Immam. The men who call out for prayers are called muazein. In places like India/Pakistan/Burma.... the releigious men who know (or claim ot know anyway) all about the Quran and the Ahadis and sit in mosques n teach Quran r called Mullahs.
In arabic, the word sheikh means one who have knowledge about the holy Quran and stuff. He might not sit in mosques but have his own busniness.
N the one who learn the Quran by heart r called Hafiz or Sheikh
I'm talking about men here only. There r other names for women

Just Muslim! And the women are called Muslimah.
Note: Imam is just the name of the leading prayer in mosques also Imams have religious information(fiqh)... And, not everyone called "Mullah". And no, "sheikh" is not the name for everyone, too.

Actually they don't have a specific name. They're called "sheikh" which is an arabic word used to describe older wiser people but not specifically holy men.
