Vieux Carre Salade
Mixed Baby Greens
Diced Creole Tomatoes
(if not, then sliced cherry tomatoes will do nicely.)
Bouquet Garni Mix (below)
Diced green bell peppers
Low Fat Soy Cheese Shreds
Zatarain's Creole Seasoning
Blackened chicken breasts, cut into thin strips
Vatican's Better Balsalmic Vinagrette (also below)
First off, place soy shreds in a bag and sprinkle in some of that Zatarain's seasoning (if you feel brave, drop in some Crystal Hot Sauce or Tabasco and shake it up really well until the shreds are coated uniformly.
Arrange greens on a cold plate (stick on in the freezer for 10 minutes, it makes a difference!) Layer on the blackened chicken strips, followed by the bouquet garni, tomatoes, bell peppers, and soy shreds. Top with the vinagrette and voila! Complete, low everything, filling, and just a little too fancy for its own good.
What more could you want in a meal?
(Bouquet Garni Mix-mince together one stalk of celery, one quarter of a yellow onion, one-half bunch of parsley, several large thyme leaves, salt & pepper to taste.)
(Vatican's Better Balsalmic Vinagrette
1/2 c. good red wine
2/3 c. apple cider vinegar
1/3 to 1/2 c. Enova oil
Stevia, Splenda, or Equal, Oregano, Konriko Creole Seasoning, Ground Ginger to taste
Blend together in shaker, serve)

If you like fish try egg battered Talapia
and Spinach With lemon
1 pkg of spinach in a medium pot with 2/3 cup water over med heat toss until spinch wilts careful not to over cook set aside.
In a heavy skillet over med high heat add 3-4 table spoon olive oil
and 1teaspoon butter
dredge 2 Tilapia fillets in flour then dip in egg wash* Add to hot pan sautee med high heat 2-3 min per side. add juice of one lemon, 2/3 c to 1 c water and one vegetable bullion cube lower heat to a simmer and cover cook another 5 minutes.
plate the spinach top with fish and all the juice. Very good light
and healthy.
* egg wash = 1 egg beaten with 1/4 cup milk

Mandarin orange and chicken salad
1 bag of fresh spinach and carrots
Grilled chicken cut in bite size pieces (You can use frozen or fresh)
La Choy crunchy noodles
Mandarin oranges in juice (I often use the ones in snack tubs for school lunches)
Honey mustard dressing (the one YOU like best)
Almond slices (NOT blanched)
Place salad spinach mix in bowl. Top with remaining ingredients. Add salad dressing. Healthy AND delicious.

Baked chicken breast, steamed broccoli and ... I would say bread but the carb thing kicked that out.
