I made about 50 of these at my friend's luau last Saturday; I learned how by watching the bartender at the Art Bar in Portland, Oregon's Newmark Theater earlier this year, hence the name:

Art Bar Mai Tais

1 oz coconut rum
1 oz medium (golden) rum
4 oz fruit juice (see notes)
2 teaspoons grenadine (approx)
1 oz dark rum (floated on top)
Wedge of lime

To make: Fill a glass halfway with ice cubes. Add coconut rum and medium rum, then fruit juice. Pour in grenadine carefully so that it sinks to the bottom. Carefully pour dark rum on the top, trickling it onto an ice cube so that it floats on top of the juice. Squeeze in a wedge of lime. Optionally, garnish with a paper umbrella with a chunk of pineapple, a slice of orange, and a maraschino cherry. To drink, stir to mix all the layers (but handing it over with the different colors is half the fun).

Notes: We started serving these using a mix of orange-pineapple juice (the traditional mai tai ingredient), and that was pretty darn good. Then somebody made up a pitcher of pineapple-mango juice and another of orange-passionfruit and they were pretty good too. So I think you can use any kind of tropical juice you like; the Hawaii's Own frozen juice concentrates aren't bad, but we preferred the Dole juice blends, they have a little more body.

Oh, and everyone agreed that Gosling's Black Seal rum is AWESOME as the dark rum -- a very rich, deep flavor, not too sweet but with that wonderful brown-sugar tang that good rum has. It added a LOT to the whole drink.

Portland no ka oi!

I don't drink alcohol, but 3 cans Cream soda, 4 cups of
fresh sliced strawberries and 1 quart of cream. Mix in
blender, pretty yummy & 100% delicious. I made this
for a baby shower and everyone loved it. It can be made
on a larger or smaller scale.
