I want to save some left over cake for about a week and thought it might stay better if it's frozen.

It is possible to freeze cake and have it last for up to a year and still taste good, but you have to follow some careful rules.

First you should put the cake in a container with a lid for a quick freeze. Once it freezes take it out of the container and place it in a large freezer bag removing all the air out of the bag. If you have one of those machines that sucks the air out that would be great. The reason for this is that the air will actually cause your cake to have a bad taste.

Second, take the cake that has been sealed in an air-tight bag and wrap it in a layer of heavy duty foil. The foil will seal out any light that can damage the cake.

Finally, place it back into the freezer and when you are ready to eat it pull it out and let it unthaw slowly to room temperature. It will taste just as good as it did the day you froze it.

Yes, most freeze very well! And wedding cake too. I froze some wedding cake for a year and had it for my 1 year anniversary. It was still tasty!

Cake freezes very well b/c of its low-moisture, high air density. Just make sure you put it in an airtight container (like Tupperware), something with a tight lid. This will keep it from forming any ice crystals (yuck!).

I don't know, but lemon bars are extremely tasty when they're frozen. For birthday cake, I'd just make sure you double seal it before you put it in.
