A Jedi? Move stiffly? Too funny. I'm a professional actor with an honours degree. If I were to tackle this part, I would start by googling the term "knighthood". Try it, one of the first sites that came up was the one I posted below. Move stiffly might not be a bad bit of advice if you are wearing a suit of armour but that is probalby not going to happen, at least I hope not for your sake. Think more about what a knight did: He fought in wars, protected the ruling classes and was a basic role model for all society. Next I would say and this is honest homework. Rent movies like A knights Tale and First Knight, Camelot, anything you can think of that has anything to do with knights. Don't stick to one actor, you are not going to imitate anyone, you are looking for a general sense of when and where knights lived, what they wore, how they moved, what thier status was etc.you want to find YOUR inspiration of how to play this role from those that came before you. As for the piece of advice about the codpiece....just ignore it.

Think what a Knight is. Forget the armor, forget the horse, the lance, the plumes. A Knight is a Jedi. If drug out naked into strangeness he knows that his job is NOT to save his ***, but rather, his job is to allow The Force to flow through him, to accomplish good and knows that Virtue is a Force in the universe.
These guys weren't exactly Judeo/Christians but more like primal warriors, berserkers (google it) and had faith that they would be instruments for good, and the devil take the hindmost.
Don't be nice, there is no substitute for Victory.
DUTY! Think of what you serve.

About all I can suggest is to say "huzzah!" to Moonlight for her well-researched answer.
You might also consider a Shakespearean twist - what if your knight really IS a girl - pretending to be a boy, who is a knight? In that case, rent "Shakespeare in Love." There is documented evidence all down through the ages of women disguising themselves as men to join the army. (In the US Civil War, a Private Thompson was given a commendation for bravery before they found out she was a woman. So remarkable was Sara Thompson, that she petitioned the government for a soldier's pension - and got it!)

Knights had to be brave, honest, chivalrous, loyal to thier king and most importantly to protect those weaker than themselves, ie peasants, women etc
