Baby back ribs are usually in stacks meaning connected together. Spare are cut up a seperate rib.

The baby back is more tender and leaner that a regular spare rib which has more fat and is more flavorful :) but I like both kinds of ribs .

Seriously, baby back ribs are from pork, and are usually more expensive & more tender. Most Spare ribs are from Beef and usually tougher. Though there are pork spare ribs, but they are usually made into country ribs..(real fatty, greasy, meater)

its what part of the amimal they come from - spare ribs come or start from the spine and baby back ribs go from the chest or tips back towards the spine
