More health benefits than you know. They're very high in vital nutrients, especially Potassium. They are fatty, yes, but it's UNSATURATED fat....the good stuff...along with Olives.
A great guacamole recipe came to me from my former cleaning lady who was from southern Mexico.
Chop up a 1/2 head of peeled garlic and put in the bottom of a bowl (preferably wooden) with 2 Tbsp salt. Smush together to pulverize and season the bowl. Add in 3 chopped avocados, juice from 2 limes, large handful of cilantro. Blend well to mix it altogether and make fairly smooth.
Add in 1/2 small vidalia or red onion, minced. Stir well to mix. Then put the avocado seeds in the mixture (the seed keeps the avocado from browning).
Chill. the mix for about an hour.
Chop 3 Roma tomatoes very small, stir in (doing it too early waters it down).
Finish with 1/2 cup sour cream stirred in. Adjust seasoning to taste.

The oils that are in the avacado are suppose to be good for you. I am not sure why, but I don't care because I love to eat them...lol!!

they do have lots of fat, but it is good fats, plus the contain antioxidants.
They are good for you, but in moderation.
