Also, i allways have a hard time knowing when it is done since it is red from the ketchup...any tips?

I bake my meatloaf on a pile of onion rings and chunks (not battered!) from the onion I chopped to put into it. Shaping the meat into a rectangle is easier than you think I bet! Using a bread pan seems to keep all the fat in the meat if you like it moist ... I also use a 1/2 cup ketchup, 1/4 cup brown sugar and about a tablespoon of BBQ sauce mixed together nicely instead of plain ketchup.

While I'm mixing the meat, I cheat and nuke four baking potatoes for 10 minutes and then place those in the same foil-lined 9x13 pan I bake the meatloaf in. If you don't have a rack that'll fit on the edge inside the pan, put them on the shelves in the oven. Bake at 375 F for 30 minutes, carefully remove the potatoes, leave the meatloaf in the oven with the door closed to keep cooking! Then I cut my potatoes in half, scoop'em out, mix the pulp with a touch of butter and salt, some sour cream, perhaps some sharp cheddar and place them back in the oven to brown on top. They'll finish cooking at the same time as the meatloaf.

During the half hour the meat is baking I prepare corn or green beans and consider whether or not I have time to whip together some biscuits. I do cheat and use the refrigerated kind on occasion but home-made is more fun. We normally don't have room for dessert but if your going to have a comfort food dinner, apple pie with a scoop of vanilla ice cream will make your family groan and loosen their pants a little bit.

Which is why meatloaf is a special occasion thing in my house and friends invite themselves over when they know I'm going to cook it.

Baked potatoes go great w/meatloaf, espeically if you do them in the oven at the same time they will get crispy skin.

As long as you cook the meatloaf for at least 45 min. covered, then take off the foil for 10-15 min to let some of the liquid evaporate, you should be fine.

By the way, you can add grated carrots and zuchini to the meatloaf so your veggies are already inside and no one will know!

For a change of pace, use the meatloaf recipe, but form into thick hamburgers and grill them. While they're on, throw on some fresh veggie skewers and corn on the cob to roast on the grill alongside them. Brush the meatloaf burgers with ketchup or bbq sauce right before serving.

Don't put your ketchup on right away (I also love to put grape jelly and ketchup on it gives a very sweet and tangy sauce to it)
We like to have mashed potatoes, or you could have potato salad with it being Summer, also some steamed carrots are good, you could have green beans or even a salad, pears make a good side dish and some rolls.

a normal sized meat loaf should only take about 40 minutes to an hour at 375.

mashed potatoes and green beans are usually what goes with mine.

My husband always puts a small mote in the top and puts a raw egg in the mote and when the egg on top is done the meatloaf is done and his meatloaf is the only meatloaf i can eat without it messing up my stomach
