Wash them and cut them into julienne strips, then thinner the strip, the crispier they get.

Then the real secret is to soak them in cold water for 10 mins to pull off the extra starch. That helps whether you're frying or baking to avoid soggy fries.

Then drain and pat them dry. Brush with olive oil and sprinkle with salt, a little pepper and some paprika. Place them on a parchment lined cookie sheet or baking pan (makes turning them so much easier).

Bake at 350* for 25-35 mins, turning once to brown the other side.

For a real treat, sprinkle them with parmesan after baking and put under the broiler for a minute.

4 russet potatoes, peeled and cut into french fry strips.
1/4 cup butter, melted
salt and pepper
garlic powder
onion powder
1 dash cayenne pepper

Spread potatoes on lightly greased jelly roll pan and bake at 375° for 15 minutes.

Drizzle melted butter over (use more if needed to coat all of the potatoes).

Sprinkle liberally with salt and pepper, then add other seasonings as desired.

Toss together to be sure all of potatoes are coated with butter and seasonings.

Return to oven until potatoes are crisp and tender.

Take your potatoes and peel. Cut into stripes and let soak in a bowl of water for 1hr. Drain and Dry. Then in a large bowl you mix a couple Table spoons of olive oil in with potatoes. Then you put a little olive oil on cookie sheet and spread potatoes on sheet. Salt and bake on 350 for 20-25 min or until brown. These make the yummiest fries.

Well, they're not going to taste exactly like fries.. but cut in strips- like half, then half, then half again .. bake on 300 degrees for 20 min or so-- season before you put them in the oven.
