Right click (option click 4 mac users) on the layer select layer properties and there is a drop menu for colours or right click (option click 4 mac users) on the hide show layer icon (the eye icon) and all layer colours come up as well

You can't. If we are talking 'Set Color' like numbers or greyscale.

You can make it look anyway you want but you can only set the color of the whole file.
