Scrambled Eggs Unscrambled from Alton Brown
5 eggs
5 tablespoons milk
1 pat of butter
Kosher salt
Ground pepper
Chives or parsley to garnish
In a small mixing bowl, combine eggs and milk with a fork. In a non-stick skillet, melt the butter over medium-low heat until it bubbles. Stir a pinch of kosher salt into egg mixture then pour into pan, stirring slowly with a heat resistant rubber spatula. As soon as curds begin to form, increase heat to high and instead of stirring, use the spatula to fold the eggs over themselves while gently shaking the pan with your other hand. As soon as no more liquid is running around the bottom of the pan, remove from the heat and serve. Season with fresh black pepper and garnish with fresh chives or parsley. Remember: if they look done in the pan, they'll be over-done on the plate.

I make scrambled eggs several ways, put frying pan on med heat and add a little butter, or margarine or even bacon grease so eggs won't stick, whip eggs with fork or whisk in a bowl, put eggs in warmed pan with the melted butter and continue to stir till eggs are no longer runny. Adding a little milk or water when whipping the eggs will add fluff to them. I also add ham, bacon pieces or anything that i have in fridge i think would taste good, but then it gets into omelet type thing instead of scrambled eggs. It's easy and yummmmmmy too

I do not like uncooked egg white in my scrambled eggs so I usually heat the butter, add the eggs then i keep on stirring all the whites till they are no longer streaky, then i remove from heat and stir the whole thing together. The skillet will still be hot and it will be enough to cook the yolks and you will end up with a creamy and delicious scrambled eggs.
You may like adding some milk to make it even more creamier but in that case after stirring the eggs add the milk and return to heat till some of the milk evaporates.

Take as many eggs as required. Beat for example; 2 eggs in a small bowl (some people add a little milk or water here) I leave it as it is. Melt a little bit of butter in the pan and pour in eggs, add a little salt and white pepper ) keep stirring until done, you can have them softish if you wish. Serve with toast cut into triangles. Options: Add a few drops of tabasco sauce to it when scrambling or mushrooms. Enjoy!

Forget what everyone else tells you. Imma tell you the short, simple, less messy way and it doesn't take 8 minutes to cook eggs. Grab your seasoning (salt and pepper for best flavor) and get however many eggs you want to eat out the fridge and butter, margarine, or cooking spray. My favorite is bacon grease left from bacon that you just cooked. ( I'm country!!) Remember to turn your burner on medium. Anyway, crack those eggs open in a hot skillet with melted butter. Sprinkle seasoning on your eggs, preferably salt and pepper, and stir the eggs for about a minute or until the eggs don't look like liquid. Simple.

heat skillet, add your choice of grease (butter, oil, etc) to wet pan. Place desired quantity of eggs in a small mixing bowl. Add a splash of milk (this will help them fluff). Mix until consistent. Pour mixture onto skillet. Depending on quantity of eggs and size of skillet, the egg mixture should start solidifying. I prefer to use a scraping motion with a spatula to get cooked part off the bottom of the spatula. Continue until there isn't any more liquid. You're done if you like your eggs a little runny. If you don't, keep them on the skillet a little longer.
