It depends on what I am making. Now if I am just cooking dinner, then I do not use recipes. However, if I am making cookies or cakes, then I normally need one. I have a few baking recipes that I know by heart. If I want an idea for something new, then I read about it and just cook it. I don't follow the recipe.

usually only the first time the dish is made. I'm even known for reading a recipe then changing it before I even make it! It's the only way I am able to stay interested in cooking 3 meals a day 7 days a week.

Verrrry rarely - my mom taught me to cook using what was in the kitchen - literally. So from the time I was 11 or 12, I could make an entire meal out of a lb of hamburger and one potato (OK, maybe a couple more ingredients, haha) -- but you get the idea. My daughter-in-law absolutely uses the cookbook - down to each ingredient - if she does not have something, she will NOT substitute. She will just go onto a different recipe. So funny.

Only as a general guideline when doing something new. I never follow it exacly, and like to throw in things I think will make it better, or change the amount of some ingredients.

When it comes to baking and needing flour to rise and stuff, I tend to stick closer to the recipe, but still change how much chocolate or nuts or substitue molasses or honey for sugar or whole wheat flour for processed, etc.

Sometimes, it doesn't work, other times, it's brilliant. But it makes cooking more fun, either way.

For baking I usually use a recipe. This is because baking success often depends on the correct ratios of dry to wet ingredients, and I have much more luck when I find a tried-and-true recipe.

Unless it's something really simple like an omlet or tuna salad, I use a recipe / cookbook. I want to make sure it comes out exactly the way it was meant to, especially if I'm cooking for my wife.

I only use a recipe if there is something I want and can't figure out how to make it on my own. I prefer to just get in the kitchen and through things together. Comes out better that way.

I start with a recipe but 9 times out of twn I make changes. I find it interesting to play with them. I like to cook though and I think people who don't might be afraid to experiment.

If I'm learning something new, I use the recipe.
Most of what I make for dinner I don't need recipes for.
If I'm making bread I still use the recipe... I don't have any of those memorized yet.

It depends most of the time I don't. But if it is a new recipe I have never used I will the first couple of times.
