Banana Popsicles
Here is a satisfying alternative to a regular ice cream bar. These creamy banana popsicles make for a yummy cool treat in the summer without all the extra fat and calories of ice cream. And you'll get some extra fruit in your own and your kids diet.


7 Serving

Ingredients

1 packet instant banana pudding mix (3.4 oz.)
2 cup skim milk
1 banana cut into pieces

Directions

Mix pudding mix and milk together.

Add cut up banana to pudding and blend evenly.

Spoon enough pudding/bananas into popsicle cups to cover bottom (or use some dixie cups and insert popsicle sticks after the banana mixture starts to set).

Periodically tap the cups to get any air pockets out.

Freeze until set and enjoy!

STRAWBERRY BANANA POPSICLES

1 basket strawberries, hulled
1 ripe banana
1/2 c. orange juice
1/2 c. milk
2 tbsp. sugar or honey
10 (3 oz.) paper cups
10 popsicle sticks

Put strawberries, banana, orange juice and milk all in a blender and blend until mixture is smooth. Add sugar or honey. Pour mixture into paper cups, leaving 1/4 inch from top to allow for expansion while it is freezing. Freeze for 1 hour, then put popsicle stick in center. Continue freezing until totally frozen. Tear away paper cups when you are ready to eat.
