You are going to want a combination og sweet and tart. My recommendation is to go 1/3 tart and 2/3 sweet. Fiji apples and pink ladies are sweet and should give you a punchthat will not overpower the tart. As far as tart, you can only go with green granny smith. That is the best for baking.
PS: Watch the amount of sugar you use in your pie. That will wipe out some of the tart was well.

I'd use a mixture of Pippins and Galas. If you can't get Galas, try Fujis. And a second place substitute for Pippins would be a Granny Smith. Remember, in the northern hemisphere, apples that are now available, have been in storage for quite some time, and are not at their peak for flavor and texture. Try using brown sugar and maple syrup to sweeten your pie -- it's a great way to add some depth in flavor.

Granny Smith is a tart apple and Fuji are sweet. Also Braeburn apples are very tart but don't know if they are good for baking.

use Golden Delicious for the sweet apple and use Green Apples for the sour and if you combine them they are such an amazing combination.
