This is really easy and good too!
1 lb hamburger meat cooked and drained
1 can cream of celery or cream of mushroom soup. I use cream of mushroom but either one is good.
1 package of macaroni & cheese made according to package directions.
Mix hamburger meat and condensed soup (not the ready to eat kind-the kind you are suppose to add milk or water to).
Put a layer of mac & cheese in bottom of casserole dish. then put a layerof meat & soup mixture. Continue layers until mixture is gone ending with mac & cheese. Bake at 350 for 20-30 minutes. Until edges are bubbly. Serve with slices of bread & butter. Delicious!

Chicken, Potatoes and Veggies
Cut up your whole chicken.
Take the leg and with a kitchen knife cut along the thigh area, gently pulling apart the leg from the body. With the knife, cut between the joints. You can cut the drumstick away from the thigh by finding the joints.
Remove the wing from the breast, and then cut the breast off the body cavity. Cut the body in half by following the spine.
In a large bowl, add 1 cup water and 2 eggs. Mix well.
Coat the chicken with an egg/water mixture, roll in seasoned bread crumbs. Put on slightly grease baking pan, skin side up. Add crushed garlic to the top and bake 40-45 minutes at 325 degrees. You can cheat and get precrushed garlic at the store... they're ina jar. Its not as tasty but its fast and easy!
If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.
While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a large microwave safe bowl, add 3 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with paper towel or waxed paper, microwave on high for 15 minutes. If you don't have a big enough bowl, microwave 1 and 1/2 potatoes for 8 minutes.
If you don't have a microwave, wash and cut the potatoes and put in a large pot. Fill pot with water until the potatoes are covered. Turn on heat to high and cook until bubbled. Then lower heat to med/high and cook 40 minutes or until potatoes are tender.
When the potatoes are done (fork should slide easily into it), carefully drain the water. Return to pot or bowl and Mash
If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk about 1/4 cup, a gob of butter (or 1/2 stick) and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
To make the potatoes more flavorful, add crushed garlic or some spices like oregano, basil or dill.
Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer

Potatoes - About 1 lg per person, wash (peel if you want) and cut into bite size pieces. Cook them until about 3/4 the way done - drain almost all the water off (leave a scant bit for 'steam'). Leave the potatoes in the pot.
Pour in a bag of Broccoli - chopped or whole, your choice
Slice up a Kielbasa Sausage and put them on top of the Broccoli
**these are in layers**
Then slice or dice Velveeta (my family always loved the Hot Velveeta) -- quite a bit, use your taste buds
Cover and simmer till cheese is melted and meat / broccoli are hot. Check every once in a while to make sure all the water is not evaporated - you can always add a little bit to create the steam. Just make sure it does not burn.
Carefully stir together and eat. I NEVER had leftovers - my boys almost licked the pot clean.

Yields: 4 servings
"Chicken, potatoes, mushrooms, and peppers are wrapped in aluminum foil for one-dish meals cooked in a campfire! These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like."
INGREDIENTS:
1 pound skinless, boneless
chicken breast meat - cubed
2 onions, diced
1 (8 ounce) package sliced
fresh mushrooms
1 yellow bell pepper, seeded
and sliced into strips
1 red bell pepper, seeded and
sliced into strips
4 cloves garlic, sliced
4 small potatoes, cubed
1/4 cup olive oil
1 lemon, juiced
DIRECTIONS:
1. In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
2. Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
3. Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

Taco Roll
brown about 1-2 lbs of hamburger.
prep a pizza pan by spreading out crescent rolls around the outside, leaving a hole in the middle. add taco seasoning to hamburger, making sure it isn't all runny. (Use half of the water). put seasoned hamburger onto crescent roll bottom, and top with shredded cheese. Put more crescent rolls(flattened out) on top, bake for 15 minutes. Add cheese, and bake for another minute or two.
top with salsa, sour cream, anything you normally put on tacos. This is one of my husband's favorite meals. I am picky and hate cooking, but it is soo easy, and it's good, too.

I usually mix this all together and put in the over at 350 degrees for 40 minutes.

Meatloaf, mashed potatoes, and a salad.
Meatloaf is simply ground beef mixed up with some bread crumbs (if you have some old crusts - just throw them in a blender, or have the kids rip them to bits.) Add an egg and some spices - salt, pepper, red pepper, ketchup (whatever you have around). Add some chopped onion or dried onions if you like them. Mix it all up well with your hands - squish, squish, and put it in a loaf pan or a square pan or muffin tins, (greased them first), and bake it at 350 until it is brown on the top and when you stick it with a knife the juice comes out clear and not red. (If it is in a loaf pan- that will be about 30-60 minutes)
My husband likes this, and it is nice because while it is in the oven, I can get the kitchen cleaned and looking good, so no last minute fuss to worry about. Then add in instant mashed potatoes or baked ones (just wash the potatos, prick them with a fork, and put them in the oven with the meatloaf - put them in first while you mix the meatloaf, since they can take longer.) Cook some frozen or canned vegetables, and open a bag of salad, and you have a really nice meal
Another of my favortie quick easy meals that looks nice is a chicken one. Get peices of chicken like thighs and legs. Also get some potatoes, scrub them, and cut them in half the long ways. Mix one cup of mayonaise with half a package of onion soup. Roll the chicken and the potatoes in this mess, and put them in a baking dish, with the skin up on both the chicken and potatoes. Then sprinkle the rest of the onion soup mix over it all and put it in the oven to cook for about 45 minutes at 350. It is really, really good and looks like you know how to cook. Just add in a green salad from a bag, and you are done. You could do a can of corn, too.
Chicken in a frying pan?
Wash the chicken peices. Dip them in a bowl with egg and milk mixed up. Then put them in antother bowl with a mixture of flour, salt, and pepper. (Can also use crushed cornflakes, cornmeal, whatever.) Put margarine in the frying pan about half an inch deep. Put the chicken in skin side down and cook on medium. After about five minutes or so, turn it over. You can poke it with a knife, and when the juice runs out clear, it is cooked.
Then take the chicken out, add a tablespoon or two of flour to the pan, stir it for a minute, and add milk. Stir this continually for a few minutes, and it will thicken. Pour it into a gravy bowl, and it tastes really nice. Then also make instant mashed potatoes. Cron or green beans from a freezer bag taste good with this.
Enchiladas:
These are easy. Fry ground beef, with some onion and or zuchini if you like. Or just ground beef. Open a can of enchilada sauce, and put half of it in the ground beef. Add in about a half cup of grated cheese. Let that all melt for a minute. Then put a spoonful of it into a tortilla and roll it up. Line the tortillas rolled up in a baking dish, pour the rest of the can of sauce on top, and then sprinkle more cheese on top of that. Bake it for about 30 minutes at 350.
I like putting things in the oven. It means I am not running around like a chicken with my head cut off at the last minute.

HMO's are really big right now...(Home Replacement Meals).....you can get good food that is crayovacced.....you drop the bag in boiling water.....there are many "gourmet" HMO's around...

Mac and cheese with saute'd onions and browned ground round in it. I am a vegetarian but I remember that that was very tasty and easy.
