I dont eat too much onion so I have to throw it away after I eat part of it.

Remove all the brown and shrivelled parts and put the fresh parts (green and white) into a resealable plastic bag. If you use the Rachel Ray method of pre-prepping vegetables, make sure you dry the onions before wrapping them in a kitchen towel and putting them in the fridge or they will rot. It should stay fresh this way for a few weeks. There are resealable vegetable bags made for just this purpose, keeping vegetables fresh by letting the nitrogen escape from the bag.

Thinly sliced or minced green onion keeps pretty well in the freezer for a few weeks. I use this method to keep green onions around. Just thaw and drain the water before use. It works well for soups and those yummy green onion pancakes.

Did you know that you can save the bottom root part of the green onion, let it dry out somewhat, then plant it in your garden? It will continue to grow and you'll have home grown green onions.
