Having traveled extensively over the past ten years, I have spent a fair amount of time observing people at various international airports. There I have noticed quite a few people with Canadian flags stitched to backpacks, used as luggage tags, worn on t-shirts, jackets and caps.

Why is this and why do people from other countries not do the same (at least to the same degree) ?

because people love us canadians, and won't rob us in shady cities when they know where we come from.

i'm an American and that i visit absolutely say that i do no longer stitch a Canadian flag on my backpack even as travelling remote places. yet then i myself do no longer carry a backpack in any understand (lol). yet in my opinion I truly have not were given any scruples about admitting my nationality even as travelling elsewhere outside the U.S. If something i attempt to provide a strong results of myself so human beings can say that they met a good American and that no longer all of us are jerks.

I think they don't want others to mistake them as US Americans; or they're simply proud to be Canadians

I would imagine a Canadian would not want to be confused with a U.S. citizen when abroad.

Maybe they have a sense of pride in where they come from and that is just one way of expressing it.

Because when we travel we don't want the locals thinks we're american
