Because they are cartoon characters.
Did the Coyote ever die?? He would fall from tall peaks to desert floor, never once did he sustain more than a headache.

Because they are related to the pure, elementary, and wide imagination of the surrealist human childhood.

We watch them with joy because we know that no matter how worse things goes, Tom and Jerry will never die, or get really hurt. It just they will keep like that forever. Trying what's beyond the normal to bring as joy and astonish us with the unbelievable imagination that makes them do all those crazy and weird things, and have all those deadly injures without any serious harm to them.

It is a childrens show cartoons don't die. Imagine those childrens faces when they see a cat get crushed to a bloody pulp by a mouse with a hammer. Once again it's a childrens show.

they are just make pretend and cannot die...unless the artist wants them to...which I doubt...too much money is made on them.
