the flax seed should be ok, after that it starts to get stale(loose its flavor) same with the olive oil.

Throw the meal to the birds since there is a possibility of moulds that can cause you serious harm - even death - in some grain products.
Flax meal is surely not too expensive to replace.
I would say that olive oil should keep almost indefinitely if kept cool. If it has gone rancid, throw it out.
All food has to have an expiry date by law. Some expiry dates are downright crazy, though. Who ever heard of vinegar going off, for example!

I will not suggest to use anything which is said to be expired. Reason is very simple, it is at the cost of your health. Because may be it can start getting some bacteria's or some kind of reaction which changes its flavour and smell also... you can check with fresh and old one and fill the differece.
So if you think that you are strong enough and will not have any problems... then only you can consume such food.

expired food contains bacteria and it's toxins responsible for
pathogenecity/causing disease.
so don't have any epired food.
eg:
botulisim:is a type of food poisoning caused by Clostridia botulinum
symtoms:vomiting,diarrhoea etc.
in very extreme cases it even causes death due to respiratory failure
it's toxin is neurotoxin acting on central nervous system

Generally, the risk is it will taste bad or you could get food poisoning. However, as stated earlier, there is a 'grace period' of sorts, so go ahead and try it... if it tastes bad, don't consume it.
