Nope. Fresh rice is best. People just use old rice because frying it is a way to use the leftovers.

We make fried rice quite often. We usually will serve freshly cooked rice for dinner, cover the leftover rice with plastic wrap and put it in the refrigerator overnight. We use that rice for fried rice. It tend to cling together so it has to be separated by "chopping" it with a utensil in a bowl or in the pan before starting.

Good luck!

You just cook the rice and cool it. then put in fridge. the "something with the rice like put it in water", i think they meant cook it. Cuz u cook rice with rice cooker, and u put the rice and water in, put the button down and it starts cooking it(its heating up to cook it). the amount of water u should have in the rice cooker, i determine it by tilting the rice cookers inner pot(if u have a rice cooker then u'll know wat im talking about) to like 30-60 degrees angle, then put ur finger on top of the rice(just touching the rice, dont put ur finger in or watever) and the water should go to 2/3 of ur fingertip(any1 other than ur thumb, cuz its always shorter). The putting to the fridge part is just so the rice dont get all sticky and stuff.

Once u take it out of the fridge they tend to be sticking together(cuz thats wat they like when u first put it in the fridge), so when u rly start makeing the fried rice, u need to separate them. and its easily done by putting water on them. lemme explain:
first u put oil on pan, then the rice, spread them on the pan and put lil water on them. Just a lil at first, then use ur spoon or watever to put a lil strenght on the rice, the water vapor(from putting water on the rice-heated pan) would separate the rice.

you take out the rice from the rice cooker n spread it in wide dish, so they would be evaporated and gets dry enough and the next day you can make a fried rice.
