It could very well just be metaphorical. Remember, Adam named all the animals and among them "no suitable helper was found". Perhaps the rib emphasizes the idea that it was from within Adam that a suitable helper would be found. It being a part of him, really meant that she was his equal.

This is the story I heard :

EVE'S SIDE OF THE STORY

After three weeks in the Garden of Eden, God came to visit Eve. "So, how is everything going?" inquired God.

It is all so beautiful, God," she replied. "The sunrises and sunsets are breathtaking, the smells, the sights, everything is wonderful, but I have just one problem. It is these breasts you have given me. The middle one pushes the other two out and I am constantly knocking them with my arms, catching them on branches and snagging them on bushes. They are a real pain," reported Eve. And Eve went on to tell God that since many other parts of her body came in pairs, such as her limbs, eyes, ears, etc., she felt that having only two breasts might leave her body more "symmetrically balanced," as she put it.

"That is a fair point," replied God, "but it was my first shot at this, you know. I gave the animals six breasts, so I figured that you needed only half of those, but I see that you are right. I will fix it up right away." And God reached down, removed the middle breast and tossed it into the bushes.

Three weeks passed and God once again visited Eve in the Garden of Eden.

"Well, Eve, how is my favorite creation?"

"Just fantastic," she replied, "but for one oversight on your part. You see, all the animals are paired off. The ewe has a ram and the cow has her bull. All the animals have a mate except me. I feel so alone."

God thought for a moment and said, "You know, Eve, you are right. How could I have overlooked this? You do need a mate and I will immediately create a man from a part of you. Now let's see... where did I put the useless boob?"

I read somewhere, i think it's in judaism, anyway not sure, but the explanation was:
God did not create eve from adam's foot so that she would be inferior, God did not create eve from adam's head so that she would be superior but God created eve from adam's rib so that they would both be equal and partners in life.

Because the writers treated women like animals and they thought they didn’t deserve to be created directly by god. In other words, “man is the glory of god, but the woman is the glory of man.” The creator could have created them at the same time in the same way, but no… first he gave Adam animals, and when “no suitable helper was found for Adam” he made him a woman. Very nice creator I must say.

Because she was did you know that women have one rib more then man also God told Adam not to eat the apple not eve that's why men have a Adams apple it got stuck in his throat and we have it there today. women don't

The creation story, whether you accept it literally or not, suggests not only a source for all things including human beings (that would be God, the creator), but also a social structure (in this case, man being closest to God and dependent on him, woman being dependent on man). This is consistent with the ancient culture of the Hebrews (as they are called in the Bible). Christianity builds on this story by teaching that this social structure was altered through Christ, resulting in man and woman equally related to God, neither of them needing mediation but having the same access and value.
