you can probably find a good shrimp salad at the store, but making it won't be too hard either - the HOOK here is presentation - line a canelope half with leafy lettuce and scoop a portion of the shrimp salad into that. Serve with pita bread cut into triangles...thats a start
Don't do the BUY IT trick - you will be found out eventually, fumble a little, show the effort! It will be most appreciated. Hiding the boxes has been done in all the movies and it is very transparent. IMHO

Very easy to make
Take 4 chicken Thighs remove skin or not
throw them in a baking dish
Take 2 lemons and 2 limes (or get the juice stuff from the market)
Throw in 4 peeled crushed,chopped or grated(which ever you prefer)large garlic cloves
take 3 med peeled potatoes sliced 1/4 in thick any kind
and add them
put about 3 Tablespoons oil
Mix it to together let it sit in your fridge over night
Preheat oven to 350 throw it in for 45 Min's to an hour Covered With Foil (depending on how you like it) {it will fall of the bone after an hour}
Make a salad
Just lettuce is easy cut to a women's bit size
(really rinsed well in cold water and drained)
Oil + Vinegar with salt+pepper placed on the table with Parmesan cheese Is a great dressing (a make it your self kinda thing)

Here's a quick and refreshing lunch. Most women like salads too!
SPINACH SALAD
2 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 lb chicken boneless chicken breast
1/2 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
1/4 c sunflower seeds
feta cheese
a viniagrette dressing
Grill the chicken breasts, season with salt/pepper, herbs.
For a boneless breast, grill on medium heat, 15 minutes on each side. Put aside to let cool.
Mix the rest of the ingredients together. Dice the chicken to bit size pieces and add to salad. Add dressing before serving.
JELLO DESSERT
1 pkg large jello
coolwhip
fresh fruits
Make the jello as on the package but use 1/2 cup less water per package. In a non metalic bowl, add jello and Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it chill for 4-6 hours. Mix up the jello and add 1/2 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Serve in glass cups and top with more fresh fruit.

Make her a tasty salad- it's nice and light for a summer lunch. Here are some ideas:
Chicken and walnut salad:
Slice chicken breast and toss with spinach, apples, crumbled blue cheese, and walnuts. Dress with an apple cider vinaigrette, which is just apple cider vinegar, a little sugar, olive oil, and salt and pepper.
OR....
sear some beef, (rib eye, whatever) in a pan after you coat it with olive oil and salt and pepper. After about 4 min on each side, take it off the pan and let it rest. In the meantime, make a bed of arugula with some sliced roasted peppers, (you can get them jarred), some feta, and pine nuts. Slice the beef and lay it on top- dress with a little balsamic vinaigrette.

Something that looks nice and tastes great and is very simple. Take a tomato and section it from top to bottom...but not the entire way through. You just want it to remain connected but fall open. Then in the center, put a scoop of tuna salad, chicken salad or egg salad (whichever you prefer). Put it on the center of a plate. Surround this with crackers. Add a pickle on each side of the plate.
You can serve with soup, if you wish.

QUICK 'N EASY LASAGNA
1 lb. ground beef
1/2 c. chopped onion
1/2 c. chopped green pepper
1 1/2 c. (15.5 oz. can) Libby's Sloppy Joe Sauce
1 tbsp. finely chopped parsley
1/2 tsp. garlic salt
1/2 tsp. dried basil leaves, crushed
4 oz. dry wide noodles, cooked and drained
1 c. Ricotta cheese or sour cream
1/4 c. chopped green onion
1 c. (4 oz.) shredded Mozzarella cheese
In skillet, brown ground meat with onion and green pepper. Saute over medium heat, stirring occasionally until meat is cooked; drain well. Add Sloppy Joe, parsley, garlic salt, and basil. In greased 2 quart casserole, layer 1/2 meat sauce, noodles, Ricotta cheese, green onion, and remaining meat sauce. Bake in preheated 350 degree oven for 15 minutes. Top with cheese; continue to bake for 5 to 10 minutes, or until cheese is melted. Makes 8 servings

in a lighter vein, i would say, keep the booze ready, love her, so that she woudn't have much time to think about food, and let her also help you in cooking some thing, so you know where she stands, as far as her culinery skills are concerned! o. k. now let's get seriously to your question!
rice, noodles, one chicken disg will be easy to manage, i feel, so buy lots of fresh vegetables, like french beans, green peas, cauliflower, potatoes, tomatoes, carrots, broccoli, some garlic and ginger etc. keep six eggs ready, buy some custard powder, whole milk, and yogurt. wash, clean all the vegs. proportionately, cut onions, ginger- garlic finely, make tomato puree and keep handy. make a good veg soup, boil eggs, make stir-fried rice with boiled green peas, you know how to prepare? cook rice, and in some oil on a skillet, after the oil is hot, put cumin seeds, half teaspoonful, let them crackle, add some chopped onions, green chiilies1or 2, peaspre-boiled,salt, coriander, then stir-fry that pre-cooked rice in that mixture. serve with yogurt, roasted almonds. boil noodles and mix with chopped ham pieces, spring onions, vegs., scrambled eggs etc.
heat milk, dissolve custard powder in a cup ful of milk, addit to the remaining milk, and keep stirring till thick consistency, cool. serve by garnishing with dry fruits, or fressh fruits, canned pineapple, lichees etc that's your dessert, she is bound to seal this dinner with a kiss!
