ok, my friend from a long time ago made this spaghetti (well her mom did) and we had it with collard greens, I LOOOVE greens. but it tasted different, like a tang like the greens...could she have used tapioca for that kick in the sauce or what? it was sooo good.

With greens!! Never tried it that way. Interesting!!

The tang probably came from a blend of vinegar(white) and a little brown sugar. The blend has to just right so as not to be too sweet or too tart. You get this balance through mixing them together in the sauce & tasting it until it's to your liking. Good luck.

Sounds to me like the collards are what gave it that kick! I never thought of collards in spaghetti sauce. I might try that myself.

Perhaps the kick was a pinch of spice such as cayanne. not sure but if I may, try a typical marinara sauce jar or can, add oregano,garlic,basil,a pinch of cinnamon and a tablespoon of sugar and let it simmer for as long as you like at low temp. The sugar offsets the acidity of the sauce, and gives it a totally unique taste.

tapioca is for pudding, just make your own spagetti sauce .eat some greens on the side.
