My son lives alone and is trying to exercise and cook healthy instead of eating fast food. He is just starting to cook and says most of it tastes very bland. He also doesn't want to cook every night, is willing to eat some leftovers. He wants it to be fast and easy because he works hard and then goes to the gym. Can anyone come up with a meal or two for him?

Salmon in Parchment
Boil some spaghetti according to package directions to al dente. Drain, return to pot, and toss with some olive oil. Add a jar of capers, drained.
On a sheet of parchment paper, place a serving of the pasta, approximately 1/3 to 1/2 cup. Top with a piece of salmon. Place assorted vegetables around the sides. I like carrots, broccoli florets, asparagus, snow peas. You choose what you like. Top the salmon with dijon mustard and dill weed. Fold up packet and bake in oven for 20 min at 450. Open packet for a complete meal. Add salad if you want, but you have your protein, carbohydrate, and vegetable all together. Great reheated in microwave.

Stir-fry is always a good option. Your son can buy chicken pre-cooked. If he does not want to or have time to prepare fresh veggies he can buy frozen stir-fry veggies. Using pre-cooked chicken, the entire meal can be prepared in less than 15 minutes. If he wants something more filling, serving the stir-fry with brown rice would be a healthy choice.

It has some simple & fast Healthy recipes in it.
We make up several meals at a time to help us not eat out too much.
Lean Protien, Carb(rice/Pasta/Patato) Green Veggie or Salad.

Mix a can of tuna with half a can of white beans. Add mixed greens or spinach greens, pickles, onion, apples, (weird, I know), and salt and pepper. Toss with olive oil. It's a great source of protein, and the apples give it a tang which contrasts the saltiness of the beans really well. It's really filling, too!

yeah chicken cutlet parmigiana: really low on fats and caloriea plus spicy, and head of romaine salad makes a delish dinner.

basic ingridients:
chicken cutlets or breast
onions
garlic
crushed pepper flakes
smoked tomatoes or canned tomatoes (both come in cans)
some (E,V,O,O) extra virgin olive oil
coarse salt or plain salt
pepper
romaine heart
smoked mozarella or mozarella
bazil
parsley
pepperoni
olives
red whine vinegar
giardinary (hot italian pickeled vegetable) (hot pickeled vegetable)
Parmisana regiano (graded cheese)
pesto sauce

yes wheat bread, Swiss ch ease, honey glazed turkey/ham, lettuce, tomato and toast it if u want 2..and your done..o r you can cook a Cesar salad, grilled chicken strips, lettuce, tomato mix it all together and Ur good. Or he can buy something that is microwavable or something..

Tex-Mex Burger with Cajun Mayo
INGREDIENTS:
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
1 1/3 pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato

DIRECTIONS:
Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.

Grilled Chicken and Pasta Salad
INGREDIENTS:
4 skinless, boneless chicken breast halves
steak seasoning to taste
8 ounces rotini pasta
8 ounces mozzarella cheese, cubed
1 red onion, chopped
1 head romaine lettuce, chopped
6 cherry tomatoes, chopped

DIRECTIONS:
Preheat the grill for high heat. Season both sides of chicken breast halves with steak seasoning.
Lightly oil the grill grate. Grill chicken 6 to 8 minutes per side, or until juices run clear. Remove from heat, cool, and cut into strips.
Meanwhile, place the rotini pasta in a large pot of lightly salted boiling water. Cook 8 to 10 minutes, until al dente. Drain, and rinse with cold water to cool.
In a large bowl, mix together the cheese, onion, lettuce, and tomatoes. Toss with the cooled chicken and pasta to serve

Pork Steak Burritos
INGREDIENTS:
1 tablespoon vegetable oil
5 pork steaks, cut into strips
1 (12 ounce) jar salsa
10 (8 inch) flour tortillas
1 (8 ounce) container sour cream
3 green onions, sliced
DIRECTIONS:
Heat the oil in a skillet over medium-high heat. Place pork in the skillet, and cook until evenly brown. Pour in the salsa, and continue cooking 5 minutes, until heated through.
Place tortillas 1 or 2 at a time on a microwave-safe dish. Cook in the microwave 1 minute on High, until warm. Place equal amounts of pork strips and salsa in the center of each warm tortilla, and roll. Top with sour cream and garnish with green onions to serve.

Chicken Berry Salad

"This recipe uses three kinds of fresh berries and your choice of mixed salad greens, all tossed together with grilled chicken and a special honey mustard dressing. This is my favorite summer salad - I make it for company all the time! And it is very pretty!"

INGREDIENTS:
1 (.75 ounce) packet honey mustard salad dressing mix
1/4 cup cider vinegar
1/2 cup vegetable oil
2 tablespoons orange juice
1 pound skinless, boneless chicken breast halves
8 cups mixed salad greens
1 cup sliced fresh strawberries
1/2 cup fresh blueberries
1/2 cup fresh raspberries
8 ounces sugar snap peas
1/2 cup toasted pecans

DIRECTIONS:
In a medium bowl, prepare the dressing according to package directions, using vinegar and oil, and substituting orange juice for the water; set aside.
Preheat the grill for high heat.
Lightly oil the grill grate. Grill the chicken 6 to 8 minutes on each side, or until juices run clear. Remove from heat, cool, and slice into strips.
In a large bowl, toss together the chicken, salad greens, strawberries, blueberries, raspberries, peas, and pecans. Pour in the prepared dressing, and toss to coat.
