Chicken, Potatoes and Veggies
Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.
If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.
While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.
When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer

Here's 2 of my own.... Enjoy!
Penne Alla Vodka
1/4 cup extra-virgin olive oil
1 pound dried penne pasta
1 medium onion, halved
4 cups tomato purée
1 cup half-and-half
1/2 cup finely grated Pecorino Romano cheese, plus more for garnish
1/4 cup vodka
4 leaves basil, coarsely chopped
salt
- Put your pasta on to cook
- heat 3 tablespoons olive oil. Add onion halves, cut side down. Season with salt. Cook 2 minutes. Add tomato purée, half-and-half, and cheese; stir to combine. Pour in vodka. Add basil, and cook until heated through.
- Remove onion from sauce, and discard. Add cooked pasta to skillet, and toss until pasta is well coated with sauce. Garnish with cheese, if desired.
Serves 4 to 6

This is so easy and adaptable, and so delicious.
1/2 pound ground beef
1- 1 1/2 can of tomato soup (Campbells is Best)
3 cereal bowls of Penne noodles
1/2 onion
1 tsp garlic powder
Fry the ground beef, onion and garlic as you are cooking your pasta.
When you drain the pasta in the strainer, put the meat into that pot and add the pasta on top. Pour the can of soup in (NO water, soup only) and mix throughly. Put into a baking dish and bake at 350* for 30 min.
Sometimes I put mozzerella cheese into the mixture before baking.
Serve with crusty bread and a side salad
Delicious!!!
Very adaptable to how many you are feeding..
You can double the receipe for 4-6 people

MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.

GHETTO BURRITOS...FIRST GET SOME FLOUR TORTILLAS...THEN GET SOME HOT DOGS AND CHEESE...CUT UP THE HOT DOGS AND PUT IT ON THE TORTILLA AND MELT THE CHEESE IN THE MICROWAVE...AND WALAAA!!! A CHEAP AND QUICK SNACK FOR YOU! EAT UP!
