As we age the soft tissues of our joints begin a process called "ossification". It basically means that your body begins to deposit calcium in the connective tissues - "hardening" the soft tissue. This process can be slowed or even stopped by consistent stretching and use of the joints. (This is why 90 year old yogis can still bend over backwards!)
