2 classic methods
-adjust seat so when you put your heel on the pedal, the leg should be straight at the bottom of the pedal stroke.
-put your foot so the joint below the big toe is right above the pedal spindle. The leg should have a slight bend when the pedal is at the bottom of the stroke when you set the correct seat height.

Now fine tune the seat height. Have someone look at your pedaling. If your hips are rocking, your seat is too high still. Also, if your thighs or knees are hurting, seat may be too low. Once you find the proper height, mark your seatpost with some tape.

56-58cm for road (seat tuble) and 18-20" for mountain.

You can "get away with" too short and too tall, but remember, as the seat tube size increases, the top tube length increases. You can get a shorty stem to compensate for this, but it will alter the handling dynamics.

The rule of thumb is to have your knee at full extention (straight) without locking the knee, at the bottom of the pedal stroke. Keep your foot 90 degrees at the ankle when you do this.

29" or 74cm (measured from the center of bottom bracket to the top of saddle) is the ideal starting point for ur inseam length if our bike is a hardtail. adjust ur saddle and check the position of your knee relative to your pedals (KOPS). knees should be slightly bent and hips should not be rocking side to side during pedal strokes.

Get thee to your local bike shop and get fitted. It is worth the extra time & effort.

Also, you will want to raise your seat on the climbs and lower it on the descents... experiment and your will enjoy mountain biking more. Ride safe!
