I already have my son as ring bearer and my daughter as flower girl. Would like to have each child do something different.

they could do some readings, be ushers, coordinate with wedding planner, an emcee at the reception, in charge of music and drinks, be responsible for the entertainment or gift bags. do you have maids of honor already or groomsmen? would somebody be lighting candles as a symbolic gesture?
anyway, have a happy marriage. congratulations!

Someone over 20 is really too old to act as a flower girl or ring bearer. Those roles are usually carried out by small children. Your children can escort you down the aisle and give you away or stand up as your attendants/witnesses.

I saw an idea for a variation of the Unity Sand Ceremony to include children.
In a regular Unity Sand Ceremony, the bride and groom pour sand (often hers white, his black) into a larger vase or other clear vessle. To include the "kids", have each one pick a different color of sand, and you can all pour together. It's a neat idea to show that the whole family was a part of the ceremony, plus a nice keepsake to remind you of your family and your wedding day!
Best wishes!
(for an "example" see the website below)

We have five boys between us. His two sons were his best man and attendant, and then each of my three boys walked me part-way down the aisle, one at a time, and each handed me off to the next. The oldest one handed me to my father, who walked me to my husband. Then the boys joined the other two on my husband's side. The pictures look wonderful.
