I want to make my own meat sauce....I don't want the help of Ragu or any of that....what do I put in the ground hamburger meat to make the sauce? Thanks

** Mama’s Spaghetti and Meatball Sauce **

The trick to this recipe, as in most Italian cooking is to use the best ingredients you can find. The choice of meat is up to you, but I try to add a piece of both sparerib, and beef to the sauce, and prefer a combination of beef and veal, or beef and turkey for the meatballs. Here is the recipe;

For The Sauce:
2 Tbsp. Olive Oil
2 Cloves of Garlic, Minced
1 Small Onion, Chopped Fine
1 Stalk of Celery, Finely Chopped
2 or 3 Small Pieces of Meat (Pork, Beef, or Chicken)
Salt & Pepper
1/4 Cup Chopped Basil
1/2 Tbsp. Dried Oregano
1/2 Tbsp. Dried Thyme
1/4 Cup Chopped Fresh Parsley
Dash of Red Pepper Flakes (Optional)
2 (6oz) Cans Tomato Paste
1 (26 oz. can/box) Pureed Tomatoes
About 5 Cups water
3 Tbsp. Grated Parmesan Cheese
1 Pound Of Spaghetti or Pasta of Choice

Brown the meat pieces in the oil until well browned. Add the garlic, onion, and celery and sauté until tender. Add the paste, tomatoes, water and herbs, and bring to a boil. Season with salt and pepper to your own personal taste. Turn mixture down to a simmer, then drop the prepared meatballs into the sauce. Do not stir for the first 15 minutes or so until the meatballs begin to firm up.

Continue to cook for 2-3 hours, stirring occasionally, and adding extra water as needed if the sauce becomes too thick. This sauce, with or without the meatballs can now be used over your pasta of choice. Just before serving, stir the 3 Tbsp. of grated cheese into the sauce. Though most people would choose spaghetti, personally I prefer rigatoni or penne. Serve over pasta cooked al dente, and offer a little more parmesan cheese at the table. With the addition of a nice mixed salad and some crusty Italian bread, this pasta dish would easily make a complete meal. I would choose a robust Chianti wine to accompany this meal.

Meatballs:
1 lb. Ground Beef
1/2 lb. Ground Pork or Veal
Salt & Pepper
1 or 2 Cloves Garlic, Minced
2 Tbsp. Fresh Chopped Parsley
2 Tbsp. Grated Parmesan Cheese
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water

Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

You can brown some ground beef or Italian Sausage to add to this sauce; drain well, and toss in the last hour of simmering.

** Amazing Homemade Spaghetti Sauce **

2 small onions, chopped
4 cloves garlic, chopped
1/4 cup vegetable oil
2 (28 oz) cans diced tomatoes, undrained
2 (12 oz) cans tomato paste
8 cups water
1/4 cup sugar
2 Tbsp. dried Italian seasoning
1 Tbsp. salt
1 Tbsp. dried basil
2 tsp. black pepper
1 tsp. dried crushed red pepper (I would half this because it was too hot for me the first time I made it)

Saute onion and garlic in hot oil in Dutch Oven over medium heat for 10 minutes or until onion is tender.
Stir in diced tomatoes and remaining ingredients.
Bring to a boil, reduce heat, and simmer, stirring often, 2 hours.
MAKE SURE TO LEAVE LID OFF OF POT TO ALLOW A LOT OF THE WATER TO EVAPORATE SO THE SAUCE WON'T BE TOO SOUPY. Serve over hot, cooked spaghetti.

Aw, I have quite a few recipes. The easiest one is to use tomato sauce cans instead (like regular Hunt's tomato sauce or something). Or you can buy the tomatos fresh yourself and dice them up and what not... then just add onions, garlic, oregano, a bay leaf, some basil, some sugar, a little milk, some broth (beef broth recommended, always better to use broth over water when possible)... so many ways... you can even throw in chopped green peppers or chopped black olives (for a little different kick).

Anyway, I've included a link to a real good recipe site. I use it often -- I hope you find Epicurious helpful.

Here's how I make mine, serves 4

10 vine ripen tomatoes
1 lb hamburger
4 cloves garlic, crushed
1/2 onion, diced
fresh or dried basil
fresh or dried oregano
tomato paste

In a pot, boil some water. Then, par boil the tomatoes, meaning boil them for 2-3 minutes until the skin becomes loose. Then under cool water remove the skin and put the unskinned tomatoes in a bowl. Put aside.

In a skillet, add 3 tsp olive oil on med/high heat. Add the onions and sautee until translucent. Add the tomatoes and using the spatula break the tomatoes in half and continue breaking down the tomatoes.

Add the garlic, a dash of basil and oregano. Add hamburger, mix.

Cover and simmer for 15 minutes. If you wish to thicken, add tomato paste. Allow to settle for 5 minutes to thicken.

I sometimes add a dash of brown sugar to help with acid from tomatoes I use a Pizza sauce for tomatoe base and then add fennel (gives a great flavor plus I love fennel ) I just use one whole basil leaf and let it float on top and remove it when done don't break it while stirring The pizza sauce is great has spices in it and makes it quick or I use my personal fav a bottle of Paul Newman's Marinara Sauce and add more whole tomatoes without juice or add tomatoe sauce to it and maybe a few more spices I never make it the same and I get a lot of requests for my recipes to me the fun is in the creating your sauce sounds great you just may want to add a few spice you really like fennel gives a great kick to it, almost a licorace flavor

8 oz. Paste, 12 oz.Sauce, tsp. each of Basil & Oregano, about 1/2 tbsp Vinegar, 1/2 tsp salt, 1/4 tsp pepper, and the trick is to use about 1 tbsp sugar AND 1 tbsp of brown sugar. Add a small chopped onion that has been sauted in 2 tbsp of Olive Oil to the browned ground meat. Simmer for hours. add water as needed...not too much though. It's great...longer you simmer...better it tastes. Good luck...

2 large cans of tomato sauce
1 can of tomato paste
2 pounds of beef, veal and pork mix
1 large onion, diced
6 cloves garlic, minced
salt
pepper
garlic powder
onion powder
parsley
italian seasoning
water

Brown the meat with onions and garlic in olive oil. Drain, but leave a little oil. In a large pot, add the other stuff and cook for about 3 hours, watching to see if it gets way to thick, add more tomato sauce or water.

YUMMMM.....my peeps rave about this.

Sauce - Fry up some garlic in olive oil. Add 3 large cans of crushed tomatos, and one can of tomato paste. Add a littel (1/2 cup) of red table wine. Add Italian Seasoning to taste. Simmer 3-4 hours stirring occasionally so it doesn't stick.

Meat - Season uncooked chopped meat (hamburger meat) with equal parts (about 1/2 cup) breadcrumb and parmesan cheese, and a teaspoon of garlic. Mix with hands. Cook in frying pan, drain grease. Add meat to sauce, simmer for 1/2 hour.

**Note - If instead of "meat sauce" you want to turn the meat into meatballs, add one egg for a binding agent, shape into balls. Fry in frying pan until cooked thoroughly, then add to sauce.

Serve over your favorite pasta.

I brown the hamburger, add onions, peppers, some olive oil, a bay leaf, oregano, tomato puree and some garlic to taste. Simmer on the stove, stirring to prevent scorching. It should cook down some. And voila! There you are!

I am a vegetarian, but here is my italian family recipe. Olive oil, onion, garlic, ground sirloin, bay leaf, basil, oregano, parsley, salt, pepper, tomato paste, canned tomatoes, water (use the tomato can to pour it). BREAD TO DUNK WHEN YOU FINISH!
